The Bikini Cocktail

Serves 10 people

For the Clementine Cordial (yields 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar

Ingredients for the Drink (produces 850ml, serving 10)

400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing

Instructions

To prepare the Cordial: Place the listed items in a pot, bring to a gentle boil, stirring so the sugar melts. Then, remove from the stove allowing it to reach room temperature entirely. Decant into an sterilised bottle, seal and refrigerate it in the fridge, where it will keep for around one month.

Preparing the Batch Mix: Pour all the liquids into one sizeable container, allow it to infuse for 60 minutes, then filter it best through cheesecloth, so it's perfectly clear.

For serving: Pour 85ml of the batch mix into a cocktail shaker filled with ice, and stir lightly for one minute to cool it down. Filter to a frosted cocktail glass or a similar vessel, top with some cranberries adding the final touch using a quick spritz of mandarin oil above the glass.
